Gluten Free Banana Chocolate Chip Muffins

These are extremely moist gluten free banana chocolate chip muffins that would be great for breakfast or as a snack. My kids gobbled them up!

Ingredients

  • 2 cups Namaste Gluten Free Flour
  • 4 very ripe bananas, mashed
  • 1/2 cup of sugar
  • 1 stick of butter
  • 2 eggs
  • 2 tbs milk
  • 1/2 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips
  • 20 baking cup liners

Instructions

  1. Preheat oven to 350 degree F. Line 2 muffin pans with 20 baking cup liners.
  2. Combine flour, baking powder, baking soda, salt in a large bowl.
  3. Cream butter and sugar together in a mixer or separate bowl. Stir in eggs, milk, vanilla, and mashed bananas in until blended. Add flour mixture from step 2 and stir until moistened.
  4. Pour batter into muffin cups using an ice cream scoop. Fill each up 2/3 full.
  5. Bake in oven for 20 minutes. Let muffins cool in pan for 10 minutes, then move muffins to a wire rack to cool. Enjoy!
