Gluten Free Banana Chocolate Chip Muffins
These are extremely moist gluten free banana chocolate chip muffins that would be great for breakfast or as a snack. My kids gobbled them up!

Ingredients
- 2 cups Namaste Gluten Free Flour
- 4 very ripe bananas, mashed
- 1/2 cup of sugar
- 1 stick of butter
- 2 eggs
- 2 tbs milk
- 1/2 tsp vanilla
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips
- 20 baking cup liners
Instructions
- Preheat oven to 350 degree F. Line 2 muffin pans with 20 baking cup liners.
- Combine flour, baking powder, baking soda, salt in a large bowl.
- Cream butter and sugar together in a mixer or separate bowl. Stir in eggs, milk, vanilla, and mashed bananas in until blended. Add flour mixture from step 2 and stir until moistened.
- Pour batter into muffin cups using an ice cream scoop. Fill each up 2/3 full.
- Bake in oven for 20 minutes. Let muffins cool in pan for 10 minutes, then move muffins to a wire rack to cool. Enjoy!
